Finger-lickin’ good

In Frisco, the 22nd annual Colorado BBQ Challenge brought a multitude of vendors sharing their ribs, pulled pork, smoked brisket, mac & cheese, jalapeno poppers, funnel cakes … you name it, it was probably there. The BBQ Challenge also featured piglet races and live music. Just another day in the High Country.

What’s Chef having for dinner?

A quick Tuesday night meal with some leftover mashed potatoes. Sear a steak, add some easy-to-cook greens such as brussels and green beans, and add a cup of sweet corn to the leftover mashed potatoes for an added kick. Super easy, plenty of taste. Chef topped this plate off with some fresh grated parmesan and prosciutto.
